Classic Hamburger

Hands-on time: 20 minutes, plus chilling

1kg (2¼lb) extra-lean minced beef

2 tsp salt

2 tbsp steak seasoning

sunflower oil to brush

6 large soft rolls, halved

6 thin-cut slices havarti or raclette cheese

4 small cocktail gherkins, sliced lengthways

6 tbsp mustard mayonnaise

6 lettuce leaves, such as frisée

4 large vine-ripened tomatoes, thickly sliced

2 large shallots, sliced into thin rings

freshly ground black pepper

1 Put the minced beef into a large bowl and add the salt, steak seasoning and plenty of ground black pepper. Use your hands to mix the ingredients together thoroughly. Lightly oil the inside of six 10cm (4in) rosti rings and put on a foil-lined baking sheet. Press the meat firmly into the rings, or use your hands to shape the mixture into six even-size patties. Cover with clingfilm and chill for at least 1 hour.

2 Heat a large griddle pan until it’s really hot. Put the rolls, cut sides down, on the griddle and toast. Remove from the pan.

3 Lightly oil the griddle, ease the burgers out of the moulds and brush with oil. Griddle over a medium heat for about 3 minutes, then turn the burgers over carefully. Put a slice of cheese and a few slices of gherkin on top of each and cook for 3 minutes more.

4 While the burgers are cooking, spread the mayonnaise on the toasted side of the rolls. Add the lettuce, tomatoes and shallots. Put the burgers on top and sandwich with the other half-rolls.
